Ice Meets Ice

November 23, 2001 -- This past January, North Americans were introduced to the 'coolest' hotel on the continent, Quebec's stunning new Ice Hotel, a retreat literally carved out of close to 12,000 tons of snow and ice. And beginning this year, visitors will be able to combine a most appropriate wine with their icy stay.

Canada's most famous ice wine, Inniskillin's Gold Label Oak Aged Icewine, will be available both at the bar and in the special wine fridges provided in-room beginning this January, when the hotel is literally reconstructed from the ground up. Icewine is made by allowing the grapes to freeze on the vine and hand-picking them at sub-zero (Celsius) temperatures. The resulting nectar is sweet, marvellously complex and supremely decadent.

There is no word yet as to whether the bar also plans to stock Canada's most famous ice beer, the Niagara Falls Eisbock from Ontario's Niagara Falls Brewing Company.
